Herbed scrambled egg, salmon & goat cheese crostini


This fancy breakfast makes my morning! I can make this one when I have few minutes to scramble the eggs, otherwise I would just go for granola with milk, but that would be less fancy!

Ingredients
Serves 2 people
6 slices ciabatta
1 tbs extra virgin olive oil
2 eggs
20ml pure (thin) cream
20g unsalted butter
2 tbs finely chopped mixed herbs, such as flat-leaf parsley and chives
20g soft goat cheese
2 pieces of smoked salmon
1 chopped tomato
